1 cup plain yogurt

Instructions

Preheat the oven to 180°C (350°F). Grease and lightly flour the cake pan.

In a large bowl, combine the yogurt, sugar, eggs, and vegetable oil. Whisk until the mixture becomes smooth.

Add the vanilla extract and mix well.

In a separate bowl, mix the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.

If desired, fold in lemon zest, chocolate chips, or nuts.

Pour the batter into the prepared cake pan.

Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and allow it to cool in the pan for 10–15 minutes.
