Cottage Cheese Pancakes
Ingredients

1 cup cottage cheese

2 eggs

1/2 cup rolled oats (or oat flour)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

Pinch of salt

Butter or oil, for cooking
Instructions

In a blender or bowl, combine cottage cheese, eggs, oats, vanilla extract, baking powder, and salt. Blend or mix until smooth.

Let the batter rest for 2–3 minutes to thicken slightly.

Heat a non-stick pan over medium heat and lightly grease with butter or oil.

Pour small portions of batter onto the pan to form pancakes.

Cook for 2–3 minutes until bubbles form, then flip and cook another 1–2 minutes until golden.

Serve warm.
