Fresh Cucumber and Tomato Salad

Ingredients
- 2 medium cucumbers, sliced
- 2–3 medium tomatoes, chopped
- 1 small red onion, thinly sliced (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or vinegar
- 1/2 teaspoon salt (adjust to taste)

1 tablespoon fresh parsley or cilantro, chopped (optional)
Instructions

Wash the cucumbers and tomatoes thoroughly.

Slice the cucumbers into thin rounds or half-moons.

Chop the tomatoes into bite-sized pieces.

If using onion, slice it thinly.

Place all the vegetables in a large bowl.

Add olive oil, lemon juice or vinegar, salt, and black pepper.

Toss everything gently until well combined.

Sprinkle fresh parsley or cilantro on top if desired.
